EXOTIC BANANA FLOWER (MOCHA - In Bengali)
INGREDIENTS
Banana flower : 1 piece (medium size)
Coconut : 1 piece (small size – finely grated)
Brown peas : 1/2 cup (small size)
Potato : 1 piece (medium size)
Cumin seeds : 1/4 tsp
Turmeric powder : 1/4 tsp
Salt : 1/2 tsp (as per taste)
Sugar : 1/2 tsp
Chilly powder : 1/4 tsp
Cumin powder : 1/4 tsp
Coriander powder : 1/4 tsp
Cardamom : 3-4 pieces
Cinnamon : 1 inch stick
Bay leaf : 2-3 pieces
Ghee : 1/4 tsp
Garam masala : 1/4 tsp
PREPARATION
• Remove the outer purple cover of the banana flower and take each bunch of the banana flower. Pluck the centre of each flower and cut into small pieces
• After cutting wash it properly and soak into water for 5-6 hours
• Drain out the water totally
• Cut the potatoes into small pieces
• Boil the brown peas and keep separately
• Heat 6-7 tsp of oil in a kadai
• Add cumin seeds and bayleaf and wait for few seconds till it sizzle
• Boil the banana flowers in pressure cooker
• Pour the boiled banana flower in kadai and stir it for 5-10 minutes
• Add salt, turmeric powder, chilly powder, sugar, cumin powder and coriander powder and stir it for 10-15 minutes
• Pour the potato pieces and coconut which is finely grated
• Add cardamom, cinnamon and brown peas then mix it well
• Stir it for 10-15 minutes again
• Pour little water and cover the kadai for 5-10 minutes
• Scatter ghee and garam masala
• Serve it hot with plain rice/roti
