SHUKTO (BITTER VEGETABLE CURRY OF BENGALI)





































































INGREDIENTS

Beans : 100 grams
Carrot : 1 piece
Drumstick : 2 pieces
Bittergourd : 2 pieces
Papaya : 1/2 of a small size
Raw banana : 1 piece
Potato : 1 piece
Salt : 1/2 tsp (as per taste)
Mustard seeds : 4-5 tsp
Khuskhus : 6-7 tsp


PREPARATION

• Cut beans, carrot, raw banana, drumstick, bittergourd, papaya and potato into small pieces
• Boil all the vegetable in pressure cooker
• Grind khuskhus and mustard seeds and make a smooth paste
• Heat 4-5 tsp of oil in a kadai
• Pour mustard seeds and wait for few seconds till it sizzle
• Put all the vegetables and fry it for 15-20 minutes till it turns tender
• Pour mustard and khuskhus paste and stir it again for 5-10 minutes
• Serve with plain rice

    This resembles the Kerala Avial , instead of khuskhus and mustard they use coconut and jeera.Must try this version.
